Chicken Pops with Peanut Sauce

We served these at our first concert last week, and they were well received. Easy to make ahead of time, they are a good match with a variety of picnic wines, especially our 2014 Russian River Valley Rose of Pinot Noir.

INGREDIENTS:

  • ¾ cup creamy peanut butter
  • 3/4/ cup coconut milk
  • 1 tablespoon brown sugar
  • Juice from 1 lime
  • ¼ teaspoon red pepper flakes
  • ¼ teaspoon salt
  • 1 cup breadcrumbs
  • ½ cup cream
  • 1 pound ground chicken
  •  ½ cupper chopped onion
  • ¼ cup chopped parsley
  • 1 egg, beaten
  • ½ teaspoon salt

INSTRUCTIONS:

  1. Stir together peanut butter, coconut milk, sugar, lime juice, pepper flakes and salt in a saucepan. Heat and stir until smooth. Set aside.
  2. Combine breadcrumbs and cream in bowl, and let rest 5 minutes. Add chicken, onion, egg and salt and mix with breadcrumbs and cream.
  3. Shape into 36 balls and grill, bake at 450 for 12 minutes, or fry until done. Serve with peanut sauce.

It Doesn’t Feel Like June

It is noon here at the winery on June 1st, but it very well could be March or April. Spring has been unusually lengthy this year, and shows little sign of changing. In fact, we even got some rain last night – a rare occurrence of late. However, the vineyards look good, and most growers report a healthy set. There is plenty of time yet before we start talking about the harvest.

In the winery our bottling line is going full time; mostly for clients at the moment, though our 2014 Russian River Valley Chardonnay will go into bottle later this month. Winemaker Evelyn White took a break in the action here at the winery to participate as a judge at the Orange County Wine Competition over the weekend. This morning she hopped on a flight to New York, where she will spend the week visiting accounts.

Mike Martini was off to Chicago a couple weeks back, and he will revisit Texas next week. After having spent last week in Southern California, I will work the New York market later in the month. Not to be outdone, Jake Martini will combine a triathlon with distributor work as he goes to Idaho in a couple of weeks. Taft Street is on the move!

Our concert series – A Little Street Music – was off to a fine start over the Memorial Day weekend, as the Daniel Castro Band rocked on before a full house. Gator Nation and The Harvest Band are slated for June, and the concert series has become a cornerstone in West County music circles.

The Tasting Room is in full swing these days as the summer has brought in the crowds. Kaitlyn and gang are gearing up for Grill 116, a coordinated grill/party with neighboring wineries scheduled for Saturday, June 20th.

There are lots of reasons to visit us at Taft Street – the picnic area is ready, the bocce ball court is ready, the staff is ready, the wines are ready – set – come on down!
